The Dinner That Saves Me on Busy Nights (And Doesn’t Blow the Grocery Budget)

There are nights where we have one practice and I feel like I have my life together… and then there are the nights where we’re split between fields, gyms, and cars, and if I didn’t think ahead, dinner would be a disaster.

Those are the nights that used to derail everything for me. Not because I didn’t know what to eat, but because real life didn’t match the plan.

And if I’m being honest, this is where most people struggle. Not motivation. Not knowledge. It’s that 5:30pm moment when everyone’s hungry, you’re short on time, and the easiest option is to grab takeout.

We have a pizza place in town that’s always busy. Two large pizzas will easily run you $40—and that’s if that’s all you’re ordering.

This meal? It’s under $25, feeds a family of four, and still leaves you with leftovers for lunch the next day.

That’s the kind of win I’m looking for.

My Throw-Together Crockpot Chili

This is my go-to when I need something filling, high-protein, and family-friendly without overthinking it.

Most of the time, I throw this together the night before when I actually have 20 minutes, stick it in the fridge, and turn the crockpot on the next morning. Future me is always grateful.

What goes in:

  • Ground turkey or beef

  • 1–2 cans beans (black beans, kidney beans—whatever I have)

  • Crushed tomatoes

  • Frozen corn

  • Peppers + onions

  • Chili seasoning

No complicated steps. No perfect measurements. I’m not standing in my kitchen after a long day chopping everything from scratch—I’m opening a can of beans and moving on.
